There are countless takes on the Tom Collins: Colonel Collins, Pedro Collins, Pierre Collins, Juan Collins and – tastiest of all – the Ingwerer Collins! That’s what we think, at least. But you’ll have to try it yourself!
- Pour the Ingwerer, lemon juice and sugar syrup into a highball glass filled with ice cubes.
- Stir gently and top with soda water.
- Garnish with a lemon wedge.
